‘Cabaret’

Red Wine   |   Yarra Valley - Australia

About

Here’s a new wine from Tom and Sally. This is a blend of Cabernet and Petit Verdot with a few stray interplanted Pinot Noir vines adding a few bunches into the fray. All the fruit is picked nice and early so the tannins are incredibly fine and the acidity is fresh. The grapes are picked pretty darn early bringing a lot of freshness to these varieties. Nothing added, including sulfur. That being said, it’s not lacking flavor in the least though the color might lead you to believe that. There’s a strong skeleton here with a lean body mass.

The bunches were handpicked and fermented in their entirety without any additions. After ten days on skins & stems the grapes were pressed to old French barriques where the wine finished fermentation and malo. The wine aged for ten months and was bottled without fining, filtration or any added sulfur.

Tasting Note

“Pale garnet hue. I think it’s charming and cheery. It’s a very fresh feeling, breezy light red, but still holds structure and shape, which is in the mind’s eye of winemaker Tom Belford. You’ll get scents of faint cherry, light raspberry, a whiff of tomato and bay leaf, just the faintest old spice cupboard note too. Succulent, crisp texture, flighty red cherry flavours, a splash of blood orange, a touch of bitterness in the best possible way and a long trail of cool, refreshing acidity follows. It’s no rosé but it’s a couple of evolutionary steps up the adaptation curve. This is excellent to drink, vibrant and bright, shapely and, curiously, quite refined in its feel. A great expression of Yarra red wine here. So worthy.” – Mike Bennie
