‘Everlasting Happiness’

Everlasting happiness is a dream for everyone and yet only achieved in the mind and spirit rather than the being.  Louis wanted to take that dream and put it into a bottle, a serious rosé was the only answer.  The base is an organically farmed block in McLaren Flat where a heavy amount of lees work and bit of barrel aging to bring out the serious side of the everlasting happiness.

The fruit was hand-harvested and whole-bunch pressed together directly to old French oak tonneau with all of the gross lees.  Louis did a heavy amount of lees stirring for the first two to three weeks building texture and getting as much oxygen in the ferments as possible.  The wine aged on the gross lees for eight months and was racked to tank to settle naturally before being bottled without fining or filtration and with just a small sulfur addition.

Tasting Note

Brilliant pink in color.  Pure, energetic, mineral-accented cranberry and blood orange notes puck up a bit of a floral and tapenade element with air.  Dry and very focused there is a bit of an oxidative nuttiness, in a good way, underneath the primary fruit tones.  It is fresh and textural on the palate with intense red berry and pastille flavors along with a jolt of white pepper and citrus tones.  It is racy but with enough body to hold up to some more rich foods.
